From the forequarter after the brisket has been removed, beef short ribs are meatier than their pork counterpart. Made up of the rib bone and layers of rib meat and fat, slowly cooked they result in rich, tasty, melt-in-the-mouth dishes. Very popular in Asian cuisines and amongst American BBQ enthusiasts.
