Slow cooked carrot lamb leg
  • 1 bone-in Ovation leg of lamb
  • 2 onions
  • 2 carrots
  • 4 cloves garlic
  • 1 tsp ground cardamom
  • 2 tsp mixed spice
  • 1 tsp white pepper
  • 1 ½ tsp. salt


Pat dry the leg of lamb and place in a Roasting dish.

In a food processor whizz the onion, carrot and garlic together until finely chopped. Mix in the remaining ingredients.

Rub the carrot and spice mix all over the lamb.

Cover with foil and allow to rest and marinated in the fridge overnight. The next day put ½ cup of water in the bottom of the roasting dish, re-cover with foil and cook the lamb at 150C for 3 hours. Remove the foil pour in one more cup of water and continue to cook for 2-3 hours.

The lamb is ready when it becomes fork-tender, and you can easily shred it off the bone.
