Greenlea beef, tomato, and egg stir-fry

The beauty of stir-fry is that you can easily modify it with whatever you have on hand. This protein rich dish is so comforting for a quick and easy weeknight meal.

INGREDIENTS:
  • 500g Greenlea beef stir-fry strips
  • 4 eggs (lightly beaten)
  • 1 spring onion (chopped)
  • 4 cloves of garlic (chopped)
  • 180g cherry tomatoes (halved)


MARINADE - COMBINE THE FOLLOWING:
  • 3 tbs soy sauce
  • 3 tbs rice cooking wine
  • 1 tsp white pepper
  • 2 tbs tapioca flour
  • 1 tbs BBQ sauce
  • 1 tbs Mirin
Toss the beef strips in the marinade until the beef is well-coated. Set aside for 15 minutes.

Add 2 tablespoons of cooking oil in a large skillet, pour the eggs in and scramble them until about half done. Transfer the eggs to a dish.

In the same pan, spread 1 tablespoon of oil, add the beef, sear, and stir to ensure it cooks evenly. Add the garlic, cherry tomatoes, and partly cooked scrambled eggs.

Top with spring onion and serve.
