The beauty of stir-fry is that you can easily modify it with whatever you have on hand. This protein rich dish is so comforting for a quick and easy weeknight meal.
INGREDIENTS:
- 500g Greenlea beef stir-fry strips
- 4 eggs (lightly beaten)
- 1 spring onion (chopped)
- 4 cloves of garlic (chopped)
- 180g cherry tomatoes (halved)
MARINADE - COMBINE THE FOLLOWING:
- 3 tbs soy sauce
- 3 tbs rice cooking wine
- 1 tsp white pepper
- 2 tbs tapioca flour
- 1 tbs BBQ sauce
- 1 tbs Mirin
Toss the beef strips in the marinade until the beef is well-coated. Set aside for 15 minutes.
Add 2 tablespoons of cooking oil in a large skillet, pour the eggs in and scramble them until about half done. Transfer the eggs to a dish.
In the same pan, spread 1 tablespoon of oil, add the beef, sear, and stir to ensure it cooks evenly.
Add the garlic, cherry tomatoes, and partly cooked scrambled eggs.
Top with spring onion and serve.
