Classic Fan Grilled Rack of Lamb

I don’t go crazy with sauce and spice when I cook these beautiful racks of lamb. The natural taste of this juicy grilled lamb rack is excellent addition to a well-balanced diet.

  • 1 pack of Ovation Lamb rack *2 pieces
  • 4 T Japanese Umami Salt (Shio-Koji)
  • A few springs of rosemary
  • 2 T olive oil
  • 8 cracks of freshly ground black pepper
  • 1 whole garlic, peeled

1. Dry lamb racks with paper towel, massage umami salt and black pepper all over.
2. Place rosemary, garlic, oil in a small food processor and pulse until thoroughly mixed. Rub the herb-garlic mixture all over the rack of lamb.
3. Place rack of lamb in a Ziploc bag, seal and leave it overnight in the fridge. Bring to room temperature before cooking. (Allow for one hour)
4. Rub off any excess herb-garlic mixture to avoid burning.
5. Place the rack on the grill tray. Fan grill at 200°C in the middle shelf for 8-10 minutes each side for medium rare.
6. Cover the rack with foil and let it rest for 15 minutes as it continues to cook inside.

Note: You can find Umami salt (Shio-Koji) from health store or substitute with sea salt if don’t have.
